  1. Για τη γάμπαρη
    Καθαρίζουμε τη γάμπαρη και αφήνουμε κεφάλι και ουρά.
  2. Για την κρέμα
    Σε τηγάνι με ελαιόλαδο σοτάρουμε τη γάμπαρη με το φινόκιο, το σκόρδο, το ξερό κρεμμύδι και φλαμπάρουμε με το κονιάκ. Αφαιρούμε τη γάμπαρη, βάζουμε την κρέμα γάλακτος, τα μακαρόνια, τον βασιλικό, το φρέσκο κρεμμυδάκι, το αλατοπίπερο και το τυρί κρέμα. Όταν η σάλτσα δέσει, σερβίρουμε με τη γάμπαρη στην κορυφή.
