  1. Κόβουμε το σουρίμι με γεύση καβουριού. Βράζουμε την κινόα για 8 λεπτά. Την κρυώνουμε σε τρεχούμενο κρύο νερό και τη σουρώνουμε. Σε μπολ ανάμιξης ενσωματώνουμε το σουρίμι με γεύση καβουριού, τη βρασμένη κινόα, τα ξύσματα και τους χυμούς από λάιμ/λεμόνι/πορτοκάλι, τον δυόσμο, τα ντοματίνια, το ελαιόλαδο, το φρέσκο κρεμμυδάκι, την πιπεριά, το αγγούρι, το σχοινόπρασο και το αλατοπίπερο.
  2. Τα αφήνουμε όλα μαζί για 20 λεπτά, για να μαριναριστούν.
  3. Σερβίρουμε.
