COLD SHRIMP SALAD

Recipe Persons Serves 4

PREPARE

juice of 2 limes
zest of 1 lime
1 pack Pescanova Vannamei large shrimps
4 boiled beetroots, finely diced
4 small cucumbers, diced
50ml olive oil
bit of fresh thyme
2 spring onions, cut in round slices
4 tbsp olive oil
2 sweet red peppers, cut in small squares
2 medium tomatoes, diced
  1. In a pan, we heat the olive oil and brown the shrimps for a few minutes.
  2. Once a nice crust is formed, we add salt and take the shrimps off the heat.
  3. In a large bowl, we mix all the salad ingredients and serve in 4 smaller bowls.
  4. We pour a tablespoonful of olive oil over each bowl and garnish with the succulent shrimps.
