Salad With Shrimps, Rocket And Squid
- We grate the orange to make zest and then squeeze it for its juice. In a small bowl, we combine the zest, juice, olive oil, vinegar, thyme, salt and pepper.
- We cut the squid into rings and put it in a bowl with the shrimps, after peeling them; we add 2 tbsp of olive oil and salt and pepper to taste.
- We heat the grill. The squid needs about a minute of grilling and the shrimps about 2-3 minutes.
- In a salad bowl, we mix the seafood, rocket and finely chopped fennel, we drizzle with the sauce and stir well. We garnish with cherry tomatoes.
