Squid Fillet With Pico De Gallo

1 pack Pescanova squid whole cleaned
2 fresh tomatoes, diced
1 onion, coarsely diced
1 chili pepper, cut in thin slices
1 garlic clove
juice and zest of 2 limes
20g fresh coriander, finely chopped
olive oil
  1. For the pico de gallo We marinate all the ingredients (apart from the squid) in a mixing bowl for 40 minutes.
  2. For the squid We sprinkle the squid with salt, pepper and olive oil and cook in a pan over high heat for 40 seconds on each side. We take it off the heat and serve on the pico de gallo.
