Squid In Pea And Cherry Tomato Sauce
- We cut the squid into rings. We finely slice the spring onions and we brown them in the pan with olive oil; we then add the squid rings. After a few minutes, we add the wine and allow for the alcohol to evaporate.
- Next, we add the peas, cherry tomatoes and water. We season well and cook over low heat for about 30 minutes. We finish by adding as much parsley as we want.
