Squid In Pea And Cherry Tomato Sauce

1 pack Pescanova squid whole round
250g peas
400g cherry tomatoes
½ glass white wine
2 spring onions, finely chopped
olive oil
parsley, finely chopped
½ glass water
  1. We cut the squid into rings. We finely slice the spring onions and we brown them in the pan with olive oil; we then add the squid rings. After a few minutes, we add the wine and allow for the alcohol to evaporate.
  2. Next, we add the peas, cherry tomatoes and water. We season well and cook over low heat for about 30 minutes. We finish by adding as much parsley as we want.
